Wild boar stew with Nazareth cheese sauce

Ingredients for 4 people

  • 750g boar meat diced into cubes (4/5 cm)
  • 2 onions
  • Chives
  • 4 shallots
  • 60g butter
  • Pepper, salt, cayenne pepper
  • 1 teaspoon chopped thyme 
  • 1 tablespoon chopped parsley
  • ½ litre meat stock     
  • Some finely cut spring onions

Kaassaus

  • 50g flour
  • 50g butter
  • 200g grated Nazareth cheese
  • ½ litre meat stock
  • pepper
  • salt
  • Brown the meat in butter with the coarsely cut onions, shallots and spring onions

  • Season with pepper, cayenne, salt and thyme

  • Add the meat stock and simmer for 1 hour until the meat is cooked. Stir regularly.

  • Make a roux with the butter, flour, stock, cheese, pepper and salt

  • Add this sauce to the meat and stir until the sauce is bound

  • Finish with chives and parsley
